Was just chowing down on some beef grillsteaks and it occured to me that there are a lot of animals out there we can eat - which is the best and why? Bear in mind the meat means any meat on the animal (eg: pork = bacon, chops, sausages etc)

Neither is Turkey....Domestic or Wild.
The "Wild Game" should be a category all by itself, as there is no comparing the taste between Domestic and Wild Fowl.
The same with your members of the Deer Family....
Wild Boar tastes a lot different than a Domestic Pig or Hog.
Farm raised catfish taste different than those caught in lakes which often taste different than those caught in Streams or Rivers....
In fact, Salt Water Fish tastes different than Fresh Water.....even the same species like Salmon.
But we are getting off topic........
I stated in a recent thread that I am on the verge of becoming a vegetarian. But until I do...I classify all my meats by Red Meat (land), Fowl (chicken, Turkey and assorted others that are available) and Fish.
Speaking of Dinners only, I try to eat red only once a week, fowl is 2 meals a week and fish is the same. Unfortunately, there is often "leftovers" which may be consumed at a lunch. That makes dinner for 5 days....one day is usually a huge salad and the last is take out or eat out.
If it were to be my last meal....I could not decide which meat to chose.

Take that into account yeah - I mean the overall best meat - flavour vs texture vs availability vs health vs benefits vs context (turkey is usually only for xmas for example)

And I cant generally eat something once Ive seen it lying on the side of the road :shock:

With the hunting season 1/2 completed, I can almost guarantee you that a lot of successful hunters are enjoying their hard earned venison and moose tenderloin.

Eating game meat and fish can be very good for your health, but there also some risks. Nutritionists judge meats on the basis of their components, especially fats (more properly, fatty acids), cholesterol, vitamins, carbohydrates, protein, and energy output, which is calories. Most of these are positive attributes, but fats and cholesterol can be negatives.

When all of the elements are taken into account, however, wild game and fish outperform their domestic counterparts.

First the good news: Game and fish are good sources of vitamins, especially B-1 (Thiamin), B-2 (Riboflavin) B-3 (Niacin) and vitamin A.

Nearly all game has moderate amounts of niacin, but more than domestic beef. Venison provides 15 times more thiamin and almost twice as much riboflavin. Rabbit and hare meats are poor ones. Most game especially venison has traces of vitamin B-12 which is important in blood haemoglobin synthesis.

Sodium and calcium are also very important in the human diet. Sodium helps maintain osmotic pressure, water and acid balance. Calcium is important in tooth and bone formation. Venison, some upland game-birds (especially wild turkeys) and most fish are rich in sodium; waterfowl, rabbits and hares are poor. Fish are also good sources of calcium, as are grouse and pheasant. Other game provide moderate amounts.

Protein is essential in the diet. According to research done by a lot of nutritionists and doctors, most people eat about twice the normal daily requirement . Too much protein can stress human kidneys. Most wild game is high in protein, and in general wild game is a far better source of protein than beef, pork, or lamb. Rabbits, hares, venison and upland game birds are the best.

Energy output of food is usually expressed in terms of calories produced during metabolism. In this category, black bear, quail, caribou, hare, rabbit, venison and upland game birds all have fewer calories than beef. Exceptions are raccoon, beaver, and some fish, notably lake trout. Wild ducks and geese are especially good source of calories, almost as high as beef and more than twice the venison value.

Now for the minuses of game meat. First is cholesterol, a fat-like substance that occurs in the blood of all animals. According to most doctors, cholesterol is vital to all human life, being necessary to form many compounds, including sex hormones. It’s the most abundant animal steroid.
There are two types of cholesterol: high density cholesterol is beneficial, low density cholesterol can clog blood circulation, causing human health problems. It is a documented fact that half of the human deaths in North America are due to high blood pressure and hardening of the arteries. There are clear links between cholesterol and heart disease.

In general wild game meats contain low to moderate amounts of cholesterol. Some interesting facts show the following: Roast beef has less cholesterol than braised beef. Flank cuts have the highest cholesterol; round cuts have the next highest, followed by loin and lean rib cuts; rump cuts have the lowest (and are highest in important vitamins). Ground beef has less cholesterol than roast, blade, or steak. Similar tests have not been done for venison.

Fats are key elements in meats. Although some fat is essential in the human diet, only a very small amount is needed to meet basic nutritional needs. A tablespoon a day would do. The only way to get rid of excess fat is to burn it off. Yes that’s right folks…..after your triple by-pass burger and large artery clogging poutine, it’s time to get on the treadmill or Stairmaster, instead of occupying the end of the couch with the TV remote.

Studies at Mount Sinai Medical center show that, compared with venison, beef has seven times more overall fat and six times more saturated fat. Wild rabbits, moose, pheasants, grouse, quail and turkeys all contain about one quarter as much fat as does beef.

So in a nut shell, all indications show that wild game is not only less fatty, than beef, but contains more vitamins and nutrients that we all need so much.

I like most meat. I prefer lamb or chicken in a cooked dinner. Not fussed on pork though. I do like the little pork sausages you have with tinned beans. I prefer ordinary sausage in hot dogs rather than frankfurters. I prefer beef curry to chicken curry. But fish I prefer to meat. I love prawns! Especially tiger prawns! Yummy!

I've never tried rabbit. What's it like? Has anyone ever had the crazy opportunity of trying rat meat (just wondered). I've fancied trying snake or aligator/crocodile. There's a 'walkabout' restaurant in the Cardiff capital. I think I'll go there and try them out. I don't feel so guilty at the idea of eating crocodile or snake meat as they are predators and will eat humans at a given opportunity.

rabbit's good, and personally, i love fish, but i voted for lamb because damn it, i hate how the US is such a beef eating country!!!

lamb's much better and if i remember correctly, requires less land to grow them. and aren't as bad for the environment.

technically when writing a menu fish is in a class of it's own ie you would traditionally have a fish course inbetween you starter and your meat entree. although fish is the flesh of an animal, meat is usually flesh from a warm blooded animal, reptile or anphibian meat being the exception, but turtle meat and frogs legs are usually classed in with fish, not sure about croc meat, wasn't eaten much in europe when i was in college

Chicken with a side of bleu cheese and buffalo sauce.... god damn im set! Celery too! (its ok with the cheese...) Blue cheese isnt my favorite thing to taste but it gets rid of some of the heat on extra spicy hot wings :)

definately can't hunt 'em over here. bears, wild boar and wolves were hunted to extinction in the uk years ago, though there is talk of reintroducing boar to certain areas like the new forest, forest of dean and some parts of mid wales

Yes, there is a week of Bear Season this year....use to be a 2 or 3 day hunt.
There have been a few Bears spotted where you live in Hunterdon County as well, Bob.

i'm not afraid of bears so much around here however...

though there's the usual raccoon scare, and an occasional opossum.

besides ozzie.. i'd rather they didn't hunt ya, stringy or not..

raccoons and opossums are kinda the type that frequent smaller towns. they're notorious for feeding on the garbage, but mostly whenever there's a worry about raccoons it's because there's also great fear of them being rabid.

If you use a butcher then ask him to get you ox heart. Don't mess with it just add a little water, salt n pepper cover in foil an cook in a low oven for 3 or 4 hours then allow to cool. Nobody else will eat it but you will have four days supply of good honest beef!

i have eaten raw cow meat (beef :? ) plenty of times including the classic french dish steak tartar and i generally eat my steaks rare or bleu anyway depending on the cut. lamb is also good medium rare to medium as is duck breast (the legs need long slow cooking) and most game. jamaican goat curry is superb with rice and peas. i have eaten horse, croc, ostrich(the lowest in cholesterol of all meats), pidgeon, venison, hare, rabbit, boar, donkey, in fact it would be easier to put down what i haven't tried, one ambition it to try snake but it's difficult to get hold ogf here, there is a company in south west england that supplies exotic meats such as giraffe and zebra, will have to find a web site or something

sushi's great dude... sashimi's better though. thats just the raw fish.

the raw beef thing is also a good one, and usually when i'm feeling a bit sick, a nearly raw steak settles my stomach... god only knows why however..

and in Ecuador i hear they eat guinea pigs..

The sushi was rough, I avoid fish ( except prawns and scampi) but I saw a box of ready made sushi in tesco today and me and my mates spent a free lesson trying different bits. Fish is bad enough on its own, raw fish is vomit inducing.

ungh... i'm guessing that's a grocery store. no wonder it tasted so damned shitty. you gotta spend money for god sushi. usually grocery stores fuck it up.

and another thing: DON'T DO THE SOY SAUCE!!!

typically you get it served with wasabi and soy and you're supposed to mix the soy and wasabi together and dip the sushi in the stuff, but in my experience it makes it taste bad, or in the case of bad sushi, worse.

in any case, ya gave it a fair shake and ya gotta respect an opinion based on that.

alsont al sushi i made with fish.

go for california rolls which avocado, cucumber, and crab in them. or there's sushi with scrambled egg. or the kappa rolls are simply cucumber...

there's such variety.

the most i paid for sashimi was $60 for 12 pieces and it came with a bowl of miso. it was cut in front of me and the freshest i ever had. you really can't go cheap on the stuff. the older it is the fishier it tastes, but salmon for example, if it's fresh, it doesn't have the slightest fishy taste and it melts in your mouth like butter. my favorite is the octopus tentacles they slice into these medallions...

damn that makes me wish there was a good sushi place around me..

Aww Kangaroo steaks for the win.. just big hunks of pure MEAT that you take off the bbq (Make sure to marinate it with heaps of beer and other random alcoholic beverages that people tend to be drinking) and ignore the juices burning your flesh whilst you take a big bite out of it.. then the tasty red juices from the medium rare inside of the steak run down your chin and neck.. pure bliss.. wash it down with some more beer and go back for more.

I seriously don't know why they don't farm kangaroos more and make them even more wholesale.. I prefer roo steaks over any other type of meat and there's plenty of roos out there, and they're better for you too if I'm not mistaken, plenty of protein and such.
